Marbled shrimp

They have the ability to change color.

During the day they look marbled and grey, at night they swap to a purple or reddish color. As a nocturnal animal, the red helps them look invisible to predators that can't see that color (hence the 'red light' trick to spy on your tank at night).

Another common name for them is saron shrimp, not reef safe but definitely really cool animals!
