So I recently cycled my new tank with this product ( which worked great btw). Measuring 5ppm nitrate according to Nyos. I am ordering only quarantined fish for this tank, and won’t have my first fish for a couple of weeks by the look of it. Do I need do anything for the next couple of weeks while I wait for my first inhabitants to arrive, or should I just let it run as it has been?
 
You can just let it run without lights. If you don't have any ammonia or nitrite for a few weeks, maybe consider adding a little ammonia just to keep them going. It doesn't need to be daily, just maybe once a week or so.

Where are you ordering the fish?

How many times?

What happened each time?
How long ago was that?

That is what one needs to know if the tank is cycled.
