I purchase a new refractometer unit, used the provided solution to zero it out to 1.000 then I used the provided reference solution(1.025) which reads 1.027 which is in the mfg tolerance range of +/-0.002. Would it be safe to say that I should subtract 0.002 from my tank to get an accurate reading?
 
I would confirm all of the calibration and samples were all performed at the same temperature.

Redo the 1.025 reference and see if the number changed

I would, yes, assuming you have confidence in the standard.
