Miniatus grouper

Has anyone kept this fish, I know all the specs, size etc but am more interested in behaviour, looking on YouTube they seem to hide in the rocks a lot, is this the case?
This is a big beautiful fish and I'd like to see him.

They do not typically, "hide." More of a curious defensive percher. Once the specimen becomes comfortable with the keeper and the surroundings of its new holding system you'll never need to search for it again. Definitely an active and outgoing personality here with this one.
