I have a nice little zoa garden doing well in my display. All flat areas are fully covered but I still have some large ish gaps on the vertical faces of my rock work.
I have recently purchase 3 new zoa frags which are aclimating on the sand bed.
Can zoas mounted vertically grow and reproduce well without weird growth patterns etc?
 
Smaller zoas tend to grow symetrically on all surfaces. Basically they expand pretty evenly on all sides of the colony with available space to grow because they want to smother out competitors.

Larger palythoa tend to be more inclined to grow towards the flow of water and will usually bias growing upwards than downwards. Growing up usually means more light, so that's one reason. The other is the deeper the water the tighter the pH constraint for growth, so the colony would prefer to expend energy where there's the best chance of success - toeards water flow and shallower. If your light is too low they might just grow really 'stalky' being the only drawback.
