Need help with an overgrown frag

i bought a nice looking green zoa frag at the lfs a couple of weeks ago. They had the frag on egg crate that was at a steep angle for display purposes in the tank. I guess that cause polyps to grow under the edges of the disk. The plug is pretty much covered top and bottom with polyps. How can I salvage the polyps from the underside? Just cut the mat and peel them off?
 
I have some palys that have majorly overgrown one of my frag racks, underneath too. I haven't taken them off yet because there are a bunch of other frags on the rack that have no where to go, and also I've never fragged a zoa or paly before and I'm nervous to try.

Someone else with advice please chime in.
