Yes, I would do that. I remember someone was selling a chiller with the exact problem and basically it will run until you cut the power :); There are cheaper solutions. I used both before

I would use this one since the probe is not metal which will break within 1 or 2 years

The only problem is they are in Celsius :); a google search will show you how to convert Celsius to Fahrenheit . 25.6 or something was my setting back then :)

I work on commercial chillers for a living. That being said aquarium chillers are very different. Same theory, though. It sounds to me like thermostat on the unit is stuck closed . Call the mfg. and see if they can send you a new thermostat
