I have a jbj 30 gallon - it has a few cuc and I put a neon dottyback and a fire fish in at the same time - no issues with them together at all

is it even possible to add any new fish or Shrimp, or did I choose unwisely with the dottyback?

Depends on the fish/shrimp that you're adding. If you're very concerned about it, then once the new addition is finished being quarantined, you can take the dottyback out for a bit while the new addition gets settled in for a week or three.

Looking to add a clown fish and a peppermint shrimp or two — it will be tough for me to catch the dottyback but that’s a good idea to swap out then put back in

Hmmm, I'm not sure about the shrimp, but the clown might be able to handle it. You can always make a bottle trap, instead of netting the fish out.
