But can the "if it's not broke don't fix it" mentality be applied to the fish as well? I.E. no ich outbreak, normal eating habits, do I still need to treat as if they are going to get sick it? Or just deal with it as it comes?

Yes and no ... some fish who've been exposed to - ich, for instance - can develop a sort of immunity, which seems to last about six months. They show no symptoms, but could potentially be harboring the parasites in reduced numbers in their gills.
