New setup - advice welcome!

Hi there! I’ve had my current tank (75gal rectangle with sump) for about 6 months. I had some issues when I got terrible advice from a LFS but stopped going there and have been doing well in the month or two since (and the three months prior).
I was browsing Facebook marketplace the other week and stumbled upon a hexagon tank with stand, sump, and skimmer for $150 (and he was selling a 5 stage rodi for an extra $75) so I figured it was too good of a deal to pass up.
So my plan is to move the large majority of my live rock in my current tank (including the mushroom and Kenyan trees) into the hexagon tank and using that as an eel tank (I also have two small clowns, a blue tang, and a pajama cardinal that will be relocated there). I then want to use my current tank as a cat shark and ray tank (keeping maybe 3 pieces of live rock but leaving it moI was thinking of putting it off for a bit before I get a little more cash flow (picked up a side job selling solar panel so will be getting about $10k in commission after three sales) but I ended up buying some live sand off of BRS because I needed a new carbon filter for the rodi and wanted free shipping. So here’s a question: can I just put 5-10gallons of saltwater in with the sand or do i need to fill the tank? I understand that the protein skimmer goes in one section of the sump and that I can add chaeto from my current sump as well... but do I need to connect the two other pipes dropping down to something? The white tube in the sump connects to the third pipe. I’m going to let this fully cycle for 3+ months so I’m in no rush... but if I fill it with water, should I start moving my rocks as well? I know I need to replace the rocks with a new bio filter in my current tank once I remove them but is it better to slowly decrease the amount of live rock or should I do it all at once? I was told to get a molly to help the new tank cycle, can this be the only fish until it finishes and I can move my current fish in?
I’m using the new-to-me protein skimmer in my current tank because my old one died. Should I have it running while this new tank cycles? Or can I leave it wherever my fish are?
What obvious things am I missing?The fish guy I’ve been going to now didn’t seem to notice any red flags in my plan but did you? I’d also love to see predator tanks! I’ve been lusting over some in that forum for longer than I’ve had a tank - predator tanks have been my whole fascination with this hobby but I knew I wasn’t really set up for one with this first tank.

A 75 gallon tank isn't big enough for a cat shark or a ray. Cat sharks can and will grow to over 3 feet in length and rays need a lot of room to swim.
I have an agreement with the fish store that I can return them once they get too big and trade for small ones again. It’s a win-win. The store gets a more expensive shark/ray they don’t have to feed and I get to have a shark/ray tank
