what do I have to do to "calibrate" this thing, I've heard horror stories

I would start it at its highest setting and fine tine from there.

I know reef octo is a good brand but the manual is lacking...what exactly am I fine tuning? I'm brand new to skimmers

Only way to adjust that type is to lift the collection cup up as far as it will go. Raise rubber seal up to that point and shell be set. Once broke in you can drop it down till you find your sweet spot.

ah, I see...someone said something about adjusting the valve or it will overflow?
