Hi guys, new to reefing, new tank 100G just finished cycling with colony 7 days turned on new red see skimmer lots of fine bubbles in. Sin tank, skimmer cup filling and over flowing, can’t dial down any lower it’s hit the stop any suggestions please?

New system may take some time for bio film to establish on surfaces such as the inside of your skimmer. During this time take the skimmer cup off and let it overflow till the bubbles die down, Or turn off the skimmer for a few weeks.
 
G’day mate! Is the water within the water line sticker on the adjustment dial?
 
Welcome to R2R! New skimmers are prone to do this until they get cycled in, may take up to a couple of weeks, if it has a drain line just leave it open back into your tank and check it every morning till it is skimming properly, if no drain take the cup off and let it run a few days and try again.

It's a new skimmer they take time to break in maybe a week sometimes then try again dialing it in

This is good advice. In addition all skimmers allow you to change the water level. Set your water level as low as possible and just let it run for a while without concern that it is "doing the right thing."

You can also simply put the skimmer on a timer. At the beginning of a tank cycle, you don't need the skimmer to run all the time.
