Newbie needing advice

Hello everyone. I'm so happy that I found somewhere I can come to get help with this hobby. My husband and I just purchased our very first tank (75g) and we couldn't be more excited. We are dealing with only 1 supplier throughout this beginning process because we know where everything is coming from. My first question is, our tank has only been up for 1 week. We have bought live sand,mixed our own water but it was with purified water, not tap water, got some established live rock with coralline on them (I believe that's what the coloring is called??) And we have 2 kenya trees and some purple ricordia. We recently just added a peppermint shrimp, 6 snails and 3 hermit crabs. With this being said, my kenya tree is kinda shriveled looking?? It wasn't much bigger then it was before but it looks like it sleeping maybe?? Lol. The guy helping us with our tank said not to add anything else besides what he has given us for at least 5 weeks. Also he said DO NOT STARTING MESSING WITH CHEMICALS AND CHECKING STUFF AND BLAH BLAH BLAH. He said this is where people start messing things up. He said let the live rock and such do thier jobs and it will balance itself out. Am I supposed to be feeding these things?? Also I noticed a few baby starfish I want to say are Garf starfish. Are these bad? Should I remove them? Sorry for the overload. I have Noone else experienced to ask

You'll see a lot of changes for the next year..get a rodi unit. Don't worry about the starfish and your guy is right. No chemicals ever. I'd get rid of the sand. Just my opinion. Your tree coral is probably fine

About almost all your questions the answers will be it depends. For example I have shells for a sand bed not sand and if you get sand-sifters the sand bed is better. So it depends on what live stock you want to put in the tank.
 
You do need to let tank cycle before adding anything. You are going to experience some nitrate issues and ammonia spikes until the tank cycles. What type filtration are you running? And yes before adding fish or corals you will need to test water parameters. Take it slow and let tank do its thing and after several weeks test your water and see how it is progressing.
