Nitrate 0, should I dose NO3?

I've only been at this since I think like January so I'm not an expert at all but at first it seems like nutrients are very sneaky at first after your tank has cycled. Like it tricks you into going "oh I guess I could raise those a little since my tank seems to be doing a good job absorbing them below the limits of detection." Then there's a lag where nothing happens... then all of a sudden they start jumping up beyond what your biological filter can get rid of quickly. My best guess is it's a population boom of microbes breaking down a large backlog of complex molecules - microbes that probably had a low population during the less nutrient heavy, pre-stocking phase.
Again, not an expert, but I'd be worried about overcorrecting so early on, speaking from my own recentish mistakes lol.
