I am considering getting a nitrate reactor and was looking at Deltec's vodka reactor NFP 616. Any reason I should go with a traditional sulphur nitrate reactor instead?

Get a sulphur denitrator. Super easy once set up. I highly recommend putting it on an apex. But they do nothing for phosphates. Do your research.

As far as I've read and experienced (vodka dosing only) all 3 sulphur reactor, vodka reactor, and biopellets only really lower nitrates.

I built my own nitrate reactor and couldn't be happier. No cleaning, no lights needed, and it works like a champion. Almost identical to Deltec. It works on both nitrate and phosphate.

Not much sharing of experiences of one method versus the another. I am most likely not going to build one, but care to share your building plans?
