No ammonia a week into cycle

I'm pretty sure I have this figured out but wanted to confirm my suspicion: I'm a week into cycling my Reefer 350 (~75-gallon display with ~18-gallon sump), and I so far have 0 ammonia, 0 nitrite, 0 nitrate. I'm cycling with about 60 lbs live sand, 20 lbs live rock, and 70 lbs of cured dry rock. When I kicked on the pumps, I saw what looked like dozens of tiny white brittle-stars blow off the rocks--pretty sure they were all dead, so I thought there would be plenty of decaying matter to start the cycle. I'm guessing maybe not? Should I toss in a piece of shrimp or a chunk of frozen mysis or something to feed the bacteria?
 
Yup just means you don't have anything creating ammonia to speak of

Lol no marinade unless you plan to eat them yourself!
