If I were to adjust my skimmer to remove about 3-5 gallons of skim/water every 3 days and replace it with new saltwater, would that be considered as a water change? Would doing this affect the salinity of the water? I'm just curious to see if anyone's ever tried this.
 
Yes, it is called wet skimming and is a good way to do a water change. A number of people do it.

You are removing normal salinity seawater so you should replace it with the same salinity. :)
