I'm switching over from Red Seas NOPOX to bio pellets. Should I just stop dosing NOPOX or should I start ramping down on the dose while I start ramping up on the bio pellets. I don't want to have a high spike in nitrates if I can help it.

I would ramp down on NOPOX. It takes some time for the bacterial population to grow well in the biopellets. Luckily you have a good culture in your tank from NOPOX, but I would also add a product like MB7 to the input of the pump for your biopellet reactor to help jumpstart it.
