I have a CO2 monitor now but realized I don’t know what levels are gonna impact my tank. Does anyone know at what level I should open a window to prevent a significant PH drop.

The only way to tell would be to monitor your pH with the window closed one day and open the next - then compare.
 
You want your indoor levels as close to outside as practical in relation to climate control. Test outside and go from there. If you’re in an urban area with outdoor co2 levels 500+ 700 indoors/at tank might be as good as it gets. Conversely if outdoor level is 300 than indoor levels under under 400 might be doable. The pH difference between 400 and 600 ppm is negligible.
 
Is your PH low or unstable?
Not unstable exactly. It’s been 8.0 to 8.2 lately but I’ve had the window open 24/7. When I have to run the ac to keep the tank cool it dips to 7.8 possibly lower. Just trying to figure out the happy medium between air exchange and cooling as next week is going to be hot here.
