This may seem like a stupid question but I was thinking about the term overfeeding. When talking about the negative effects of overfeeding are we talking about too much uneaten food that ends up becoming waste or that the fish (like mine) will eat anything you throw at them increasing the waste they produce?

Correct, you can overfeed your fish, which causes an abundance of fish waste. Unfortunately there is no amount I can give you to feed your fish. It's going to depend greatly on the amount of fish, coral, and your filtration system. General rule of thumb is that if you're feeding and getting algae growth cut back on your feeding or increase water changes to get the excess nutrients out of the system.
 
The term itself is subjective. Like you mentioned, people use it interchangeably with respect to feeding fish too much and having uneaten food. The food will one way or another end up as nitrates.
 
I agree that it does depend on amount of fish corals and your size of tank and you should at first feed a lot for them to like being in the tank then only feed once every 2 or 3 days
