Hello - the 25 Lagoon by Innovative marine comes with the leveling mat and I would like to add another layer to it. What other materials that I can use- HDPE?

Why add to it? It shouldn't have to do any real 'leveling' - it's just to protect against any sharp pressure points or minor imperfections in the surface it'll sit on. How thick is the one it came with?
You can buy mat material from BRS (or others I'm sure). But toolbox drawer liner is pretty good too, or 1/4" yoga mat material.

You only need to use the one that came with the aquarium. It will not do anything.

The one that I have is thin from what I see and that's the reason why I would like to add another layer.
I am thinking foam board but it may deteriorate over time.
