So one night my peppermint shrimp suddenly turned white along with my two clowns turning a pale orange. The next day the shrimp died. Anyone know why ? They were all acting normal and breathing normal

Welcome to R2R. :-)

Were you viewing the clowns at night with the lights off? If so it's not unusual for fish to display less coloration at night.
The Shrimp could be molting or died from stress related to molting.
How is the basic water chemistry?

Like @Tahoe61 said. Peppermint shrimp are nocturnal, although they’ll come out when they smell food during the day. I’ve not seen one look pale, even at night. Perhaps you saw it in the process of molting. Are you sure you found the shrimp and not just its molt?

Yeah It was the actual shrimp and not the molt. And from a test the following day it turns out my nitrites were above 5.0 and ammonia was 2.0. Still wondering how the spike happened though but that might have been the cause
