So I've had my tank going for about a week.
The Live Rock I bought from the fish store had some Aiptasia on it so the guy recommended getting some Peppermint Shrimp to eat it.
I put those guys in and the found it real fast and its seems to be totally gone. Now he did say once the stuff was going that I could return the shrimps to him for a credit since they might end up eating some Corals I might get down the road.
Is this correct or should I just keep the shrimps?

I just went through a similar process and didn't see my Peppermint Shrimp for about 2 weeks until one night I caught him nibbling on a sea cuke. He's much less shy now and pops out every now and then during the day.

From what I've seen and heard, Peppermint Shrimp are reef safe for the most part, so I wouldn't worry about that just yet. Just keep an eye on them when it comes time to add corals.
 
Ok. But my point is now might be a good time to try and catch them when I have nothing really in the tank. Also they fish store guy said he'd buy them back.
If they are going to eat coral I might as well get rid of them now.
 
My point is that there is never a sure thing, but Peppermint Shrimp are considered to be reef safe. I wouldn't worry about it.
 
I had a pair of peps that were eating some of my LPS; if I were you I'd make sure all aptasia are gone and I'd get rid of them. Tearing your tank apart trying to get them out will only be stressful on everything else once you add livestock.
 
Have had them in the past, will never have them again. IME, they can't be trusted. Seen them even go after an S. haddoni (( carpet anemone )).
 
Had one Pepp shrimp and caught nibbling a Hammer. I caught him in few minutes w/o removing LR in the tank- timing and luck I guess. Then returned Pepp at the store. Hammer did not made it.
 
I blasted the few aptasia I had with boiling lemon juice. my four peppermints wouldn't touch them. I have all softies and lps and the shrimp never touch anything.
 
I fought an all out war against the aiptasia anemone. Dollar or dollar the peppermint shrimp is worth is weight in gold. I've never seen the pair I've kept over the last year eat anything that they shouldn't. I've always fed heavy thus the aiptasia problem. My shrimp chill till I feed the tank then its a mad dace with the rest of the tank for dinner.
