pH question while kuring rocks

I made a few batches of diy rock with white cement, sand and perlite. It's taking a long time to kure but that's not what my question is about.

My first batch is in two buckets and I change with tap water regularly from 3-7 times a week.
The pH has dropped on both but one has settled at 9.7 and the other 11.
Without change for maybe 2 weeks I decided to change the lower one with carbon filtered tap water. My original water has a pH of about 8.5 and after the carbon filter it's 6.3.
After the change each day it rose about 1 level until it went up to 10.5, so I was confused. I filled it with regular tap water again and again it went back to 10.5.
Of course it doesn't make any difference to my kuring process, I'll continue until I see less than 9 but what exactly is going on here??
 
I read this just today. Not sure this is exactly related, but I offer it, FWIW

I was thinking something similar recently.

I just changed the water again and it read 10.4 so hopefully it's on the way down.
Is it possible that the lower pH water "opened" up something in the rock to release more "something" lol?
