Is it possible to dose too much phyto? I find that I am harvesting way more each week than I am dosing, I hate throwing it away, but am concerned to add too much. At what point would I see harmful effects? What should I be looking for?

You can overdose phytoplankton. And if you do so you could cloud your water and your No3 and Po4 would be elevated. But you would have to dose a lot to do so. And if you have been dosing for a good amount of time you can probably do a pretty big dose all at once. I have a 24g Acropora dominated tank And I was dosing 60 ML of live phyto every night and the only timer I every over dosed was when I stop dosing for about 2 weeks and then dosed the same amount that I was dosing so, If you haven't build up the dosage, I wouldn't recommend dosing very much. And if you have it would be pretty hard to overdose.

Build up slowly to a level you are comfortable with. Here is some good info. Some say to start with 5ml per 10 gal 3-4 times a week and build up from there.
