Finally ditching the canister and plumbing a sump. I have a eshopps hob overflow. So far this is what I got, 1" pipe for drain with a 3/4 pipe return. My question is what type of valves do i need? 45 or 90 degree elbows and union fitting. Any suggestions would be helpful

Ball valves are easy to find, but gate valves are easier to "tune". Gate valves are more expensive and probably need ordered as well. 45 degree elbows are easier for water flow, 90 can slow water pressure greatly, but may be needed depending on setup. Unions close to any pump and anywhwee else you might want to have a quick/no cut spot.

You only need a valve on your return to tune return flow to match your drain. A ball or gate will work but as rayn said, gate valves are easier to tune and allow for finer adjustments. For PVC gate valves, use Amazon they are pretty cheap. Don't get any check valves either.

HOB overflows like you are using are prone to developing air in the siphon tube and losing siphon. Faster flow is the key to avoiding this. Consider drilling.

When I get back from this out to sea I'm going on I may end up drilling problem is I can drill the bottom so I'll have to go another route.

Siphon tube overflows are highly reliable, those who say different either have never owned one or had it set up improperly. There are hundreds of thousands of them in use and failures or problems are rare. Read the information on the Lifereef overflow site and judge for yourself. Eshopps is a newer manufacturer with a similar successful product which I have personally owned in the past.
My preference is a drilled display with built in overflow box but that is not always possible such as modifying an existing system.
