I currently have a 65g and 120 gallon that I am going to combine to one new 180 tank. The 120 currently resides where I want to put the new tank, there are 2 fish in it. I have about 150lb of rock and 150lb of sand in the 120, the 65 has 40 or so lb of rock and 60 of sand. I'm planning on moving the 2 fish to the 65. Pulling rock out of 120 and placing it on a tarp with towels. Sand is going to get taken out into buckets and I should be able to get about 50 gallons of water out into a tank. Once that is done, do I just move my sand and rock into the new tank, add water, move the remaining rock from the 65 and finish filling the tank?

That can work.

Do you have a Brute trash can (especially one with the wheels attachment)? If so, put tank water in it and move the rock there. If you put in a pump to move some water you could keep it in there for weeks while you set up the new tank. I've even kept fish and inverts in mine at times.
