I use a plastic 'food container' thats 'flat' - I cut holes in the sides so there is water flow underneath (i.e. no dead spaces). This has worked well

I've attached a photo here. Using a few dollars in PVC and light diffuser from your big box store, can easily make an adjustable stand for your skimmer. I chose to have the legs threaded so that I could adjust the height within about half an inch.
