I want to eventually go full on sps.

which would be better?

2 mp40 on the back

or 2 mp10 on the back and one mp40 on the side?

It would all depend on tank size. If you're going to spend that much gyre may be better and cheaper.

I have 4 mp40s on my reefer 250. I use the wide flow guards on them, which save my corals from dying from super high flow.

To be honest, my setup is overkill and I'd much rather have 2-3 mp10s.

MP10s are spotty on the glass thickness of the RSR250. People have made it work, but that involves dialing them way down. You’ll be quite frustrated picking up the fallen wetsides from behind your rockwork.

Is there a configuration on Apex that you'd reccomend?

I use MP40s on my 1/2” glass. I wouldn‘t bother to buy MP10s for that glass thickness. Here are some experiences of people using MP10s on 1/2” glass. YMMV.
