Qt problems

So I always have issues when I go to add a new fish. It will set empty for months on end then I’ll go to add a fish and my ammonia will go high cause of the all of a sudden amount of fish food and waste. What does everyone do when there tank sets empty for awhile. Or anything at all

I just add biospira. Usually 3 or so days before the fish arrive. I don't ever see any ammonia in my QTs.

any rock etc for the bacteria to hang on to? Just a sponge filter?
