I think I'm going to be investing in some already quarantined livestock from DrReef to get my tank started. Anyone have any other recommendations?

Also, what size quarantine tanks are yall setting up? I'm debating on whether I need to purchase a 5 or a 10 gallon.

QT tank size will depend on what fish you'll get and how big they'll be when you get them. i would say 10-20g will be good enough.

Dr Reef's is widely known and respected, there is also TSM Aquatics who have been around for some time as well. I am unfamiliar with any other "big" QT vendor.

I know a lot of people like FisHotel too for fish.
Dr. Reef QT’s their inverts for 76 days in sterile, fishless tanks; TerraReef Aquaculture QT’s their corals and inverts for minimum of two months; I’ve heard but can’t confirm at the moment that Reef Cleaners QT’s their inverts and macroalgae too.

Marine Collectors also does quarantine fish. They give you the option to buy or pay extra for a fish to be quarantined for 14 days or sometimes longer depending on the fish
