I'd LOVE to setup a tank that has Hippocampus Erectus however, I've heard that these species are sensitive to temperature is it possible to keep this speices around 78-80 degrees or is that too warm?

They like temperatures between 69.8 and 80 Degrees, I’d say that 80 is on the warmer side but it’s not impossible for them to be kept at that temperature. I recommend going for more around 78-77 degrees. If possible Id say go for something that’s in the middle (Probably 75-76 degrees)

my system hovers around 78 and sometimes hits 80. in your opinion/ experience would that be too warm?
I know others that I've spoken with say that maybe a little high.

The prevailing thought is that temp a above 74 promotes the acceleration of harmful bacteria propagation

I would highly recommend a chiller.
