Any particular reason it says not to mix for more than hours?
 
Because they have their mix down to a science

Storing the mix
If you wish to make your RED SEA SALT mix ahead of time, store it in a sealed container to avoid natural evaporation, and place it somewhere dark, with a surrounding temperature of up to 25 degrees Celsius – or 77 degrees Fahrenheit. Under these conditions, the mixed water should be good for about 7 days. We do not recommend storing Coral Pro Salt for more than 12 hours, as it will precipitate and reduce the elevated levels of Calcium and Alkalinity, so it is highly recommended to make it just before use.
 
I don't mix it at room temperature for more than 1-2 hours. Just until the PH is stable and the water is clear. Then I heat it with circulation and use it within 24 hours and there are no issues with it. I then store the extra in sealed containers for use in my nano tanks and I just make sure I aerate it and heat it then test it before I use it.

So would this apply to most salts or just this particular brand.
 
The purple bucket salt are high alk and calcium. High turn over (aeration) in the bin will rise ph. High alk, cal and ph will cause the alk and calcium to precipitate out. Precipitated out seawater will have low alk, low calcium and low ph. You will see white calcium coating on the mixing bin. Once the seawater precipitate out, the new seawater are no longer up to specs.
I use blue bucket now. I mix the blue bucket saltwater for 2-3days before using it. Sometimes a week.
