It is better to never use a piercing saddle

I would put a tee in by a sink over those two options.

If you are hooking up at a sink this would be a good option if it fits your plumbing

I would also recommend to not use the saddle needle valves for hooking it up. As already mentioned if near an sink just used adapters. It's always best to have whatever method you choose to hook it up reversible.
