I had originally planned on dripping my RO line into my sump with a float valve. Is there a way to monitor the level in the sump as it goes down and up? Something that will connect with my Apex and send me a text or email if the water level goes up or down?

Never hook a RO/DI directly to a sump, this is asking for a disaster. Get an ATO system and fill a remote ATO reservoir with the RO/DI so you have a limited supply of water you could possibly flood the tank with if you experience a failure. Flat valves are mechanical and not the most reliable thing around, look at how many toilet floats or evap cooler floats get sold in a year. I prefer float switches or a digital/optical/air sensor to float valves.
