Rock / Re-scaping

I'm looking to re-scape my tank, and maybe switch out some of my current rock with new dry rock. How much would be too much to switch out / add?

Are you planning to cure the new rock before adding it?

Most new rock that is added will either add ammonia (from die off), phosphates or both. If the rock is cured beforehand then I think you could add/switch as much as you want. If you don't cure it then you will need to be very careful as adding more than a little at a time could cause mini cycles and wreak havoc on your livestock.
 
That's what I don't wan't to happen. How much would be advisable? I have a 60 gallon with about 75-80# (estimate) of rock currently in there and about an inch of sand
 
I'm not necessarily looking to "add"...more like replace. I have some pieces of the dried that have more unique shapes than what's currently in there. So I'd swap out pieces. I don't feel there is enough room to just add more rock without it looking bad
