Where else can you install one....besides in laundry room or outside using a water hose?

Anywhere there's water and a drain, you just need the right plumbing fittings.
I used to have mine under the kitchen sink.

I've done under a bathroom sink, used murlok valve inline on the water supply line into the rodi to make it easier to turn off and on without crawling under the sink. Still use the same now that it's in the laundry room.
Under the sink I used an adapter similar to this on the cold water line to supply the rodi

Obviously you need to have a supply line and a drain, but they can just be 1/4 tubing which is pretty easy to run. I’ve installed mine in my garage and ran the tubes up the wall, into the attic, then down into the laundry room. And frankly you can even run the drain outside into a garden or something if that’s easier.

Is there a way to tap into the cold water line going to the water heater, or is that not wise? Just trying to get it out of the wife’s site.

Usually a saddle valve will work, nothing wrong with where you want to put it.

you can use but a t in that line and sweet weld or if its PVC even easier.

Tapped into bathroom waterline & drain into the drain.

I ran the lines through the walls as my fish closet is in another room.

Honestly water heaters can be plumbed in so many different ways with different kinds of pipes and fittings and such that you might have better luck posting a picture of your water heater and people can suggest what you could do with what you have.
