Running Multiple HOB Overflows

New to this forum, long time fish enthusiast.

Currently in the process of plumbing my new reef tank and I have used HOB (Eshopps) overflows for years without any problems even during power outages. Ive been building my dream reef tank setup for the past 8 months and have been doing a lot of research. What I have determined is there is a slight chance (if ran correctly) that the siphon will break. My theory to prevent a potential siphon break is run more than just one HOB. I bought a new Eshopps PF-1200 (which has 2 siphon tubes), in addition I want to plumb my current Eshopps PF-800 into the tank as well. So if one of the three siphons break, there will be two more.

So my question is: Has anyone done a setup like this before? If so, are there any cons to doing it? Or should I just run the PF-1200?

Note: I am not going to drill my tank even though its more "reliable". I have been reefing for 7 years and have never had a siphon break, even after a power outage.
The tank I am working on is a 125G

I travel a lot for work, so I'm gone about 1-3 weeks at a time. It would be nice to have a bit more piece of mind having a mechanical fail safe for the drainage system.

Pro: I could cycle more water through the skimmer side of my sump and not be limited to drainage flow rate when tuning my return flow rate.

Con: I have never ran an overflow box siphon at low speeds. This would most likely create more bubbles, which I think might lead to a possible siphon break?
