My apex has been telling me my salinity is at 1.025 my refractometer says 1.023. Should I do a water change? Or wait until Tuesday to go to the lfs and double check my salinity there

You can buy a lab grade calibration fluid that is set at 1.026. That's what I use.

Calibrate the refractometer and trust that. Those salinity probes are very fussy, and even harder to calibrate 100%. Mine right now says 37 ppt and my refractometer, which is correct, says 35ppt.

Yeah I've noticed those salinity probes suck.
