I've seen people say sand sifting goby are good if you don't have corals on the sand. Is that because they eat the corals or cover them in sand?

They cover them in sand
And they will spit sand on your rocks as well
I just sold mine a couple weeks back
Got tired of blowing sand off stuff all the time

Don't do it. I been trying to catch mine. Moves sand everywhere and creates uneven mounds. Buries all your corals and stir up nitrate / phosphate. Don't do it!!!!

Take a water bottle and cut the top off and flip it around and toss a little food in it and put it in an area the goby really hangs out and you’ll catch it in no time
The day I sold mine took me about 2 minutes to get him

I love my diamond goby. Keeps my sand nice and clean. Diamond gobies tend to stay on my sand, so they won't cause a snow storm in your tank. He never covers any coral, but my engineer gobies, now that's a different story.
