shark jaws

looking to put a small set of bonnet head shark jaws in the tank. Has anyone done this before, and is this reef safe?

Because they are cartilage and not bone, they will decay/rot.

Sometimes when you buy shark jaws they have been coated with who-knows-what to keep them from breaking down so that is one thing to consider. Additionally, if you have skittish fish then anything sharp in the tank could be problematic. Personally I leave the set of foot wide shark jaws that I have out of the tank so I can keep them around, but I have seen it done.
