If I suspended a shelf stable product such as spirulina in gelatin fluid and deprived it of oxygen and light how would it affect the shelf life at room temperature?

Very likely.

For one thing you would likely be contaminating the product with bacteria, fungi and other microorganisms. Secondly, gelatin fluid would provide a moist environment for microorganism growth.

That being said some sort of preservative should be added to increase shelf life then.

Can refrigerate or freeze the mixture?
 
I am considering adding citric acid to lower the ph to 4.4, this should inhibit bacterial growth without breaking down the proteins too quickly. Any thoughts?
