Skimmer settings

Although I know on a fundamental level the purpose and function of a skimmer I’m a little confused about different ways to use it for different purposes.
mall I know is turn the flow so it creates small bubbles that overflow the top of the bubble chamber into the collection cup. I’ve read in different threads and seen on videos about dry skimmate or running your skimmer wet or heavy but I don’t know what circumstances would cause you to want to run dry vs wet vs somewhere in between. I have a 125g tank with Trigger Sapphire CR44 sump and my skimmer is a Reef Octopus 150INT Classic.
Anybody care to enlighten me?

From my understanding, the dry side is best on a typical tank as you waste less water, but when carbon dosing or running biopellets you want a wetter skim.
 
Thank you. I am putting skimmer back in today after 72 hour blackout for dinos. Running carbon reactor. Wondering how to set it for best results after a hopefully massive Dino die off.
 
I fixed my dino issue with dosing nitrate. I also ran a uv but I can't say how much that helped compared to the dosing of nitrate
