... how do I keep it from growing back in that spot from the stubs that are left? I would rather not have to trim pieces of the rock off.
 
glue over it. ...or if you can remove the rock temporarily, take a lighter to the area.
 
What worked for me was I had a bunch of small sea shell that i placed on top to keep the light off for a few days.
 
I used to let mine get really thick and tall, but before it starts to fall over the base will sometimes weaken and you can get the whole stalk by pealing it off. Pull it....just like the weed it is.
 
After I cut them off, to ensure the nub doesn't grow... I turn off all the pumps and spackle some kalk paste on it for 20 mins to cook em.
 
Peel it off at the base don't clip or trim it. It has a somewhat rubbery base and usually peels easily if you can work a fingernail, toothpick or something under one edge.
