Do all stags grow big and tall like the green slimer? And are they pretty easy to maintain considering they can grow big and tall?

Green slimer is acropora yongei species its the bigger kind. Formosa and Cerviconis are smaller and thinner branch. They will all grow similarly verticle with multiple branching

Yes u can see green, purple slimmer in this video and the Jade Formosa also a few Australian wild stag in my reef tank. My tank is staghorn dominate reef.
 
There are a ton of different staghorn varieties. All with a little different branch patterns and branch thickness with different coralites. I am not sure how many have been introduced to the aquarium trade though.
