Starboard VS. Cutting board

Hey R2R peeps. I'm close to getting my upgrade wet finally. Build thread coming in a lil bit. Going BB on this one. Read about SB and made some calls to find it. The local place where i found it, also carries cutting board. Its a lil cheaper. Im going with 1/4" in either. Was told the only difference is that the SB is treated for UV since its really used in boating applications. Lets here some thoughts. Thanks in advance. Paul C.

Cutting board I would think is food safe and should have no chemicals other than that basically starboard without the UV coating.
Boating supply shops carry starboard not sure about here in Mass. but I know it's all over in Florida in these places.
 
You just need regular HDPE, go 1/2" unless you plan on using silicone to seal the 1/4" down, otherwise it's going to lift up and warp a bit, letting junk accumulate under it.
