Stax rockery

I am at the beginning of planning the rock and sand for a salt water tank about 700 gallons.
I am planning on putting a dwarf nurse sharks in it and wondering if anyone has some advise on how much structure should be in the tank.

I am also wondering what is the best sand to use- getting conflicting advise on the sand subject…….

The last large reef tank I saw on YouTube with stingrays had a two large floating reef structures which allowed the rays to have most of the sand bed to themselves.
