What am I doing wrong here...I used PVC glue and a clamp but it's still leaking. What am I missing?

PVC on a barb fitting wont do anything and that tubing is not made to be glued with PVC glue.
You can try to tighten the clamp more, sometimes I really have to tighten a clamp (or even use two clamps) to get it to work.

1.) Take it all apart.
2.) Throw away that hose clamp and use a new one.
3.) Remove any cement from the barb fitting.
4.) Cut off the section of the tubing you glued. Make sure to cut the tubing even all the way around (square). Preferably with a tubing cutter.
5.) Reapply the tubing without any cement. Make sure it fits as far as possible onto the barb fitting and it's evenly flush. It's hard to tell but the tubing may have to slide under the lip of the barb fitting. There is a chance your tubing is too thick to do this.(BTW - The adapter fitting is not pvc.)
6.) Use a new hose clamp and tighten it as much as you can with a screwdriver. Then take a socket (probably 8mm) with a socket wrench and snug the clamp slightly more. Looks like there is not enough room for two clamps. If there is, then use two clamps tightened as much as possible with a screwdriver.
Hope this helps and you get it sealed properly.

Personally I don't like the clear tubing like that, and braided line would be much better.
I also don't use metal hose clamps, nylon is much better and won't rust away, and I usually use 2.
When it comes to hose and barb fittings, I like that connection really tight, like slightly over sized bard or smaller hose, and I always place end of hose in boiling water to soften it up so it will go over a larger barb, then it's a really tight and secure connection.

check to see if there is a burr or grove cut into the barb fitting if so sanding will help solve this from creating a place for water to leak . This is often the cause . Also that hose clam is to large . You can sometimes bend its surface to match the tubing. but its best to use a clamp close to the size of hose your using..

I am wondering why you have a quick disconnect fitting screwed into a True Union valve. I think I would take that CPC fitting out of the equation. I would just put a hose barb fitting in that one end of the True Union valve and connect the hose to that. Then all you have to do is unscrew the union on that side of the valve to remove the hose. My 2¢ anyway.
