For a 100-gallon reef tank - center-rear overflow - SPS. I realize extra water volume is a good idea, but is sump volume more important than say skimmer or flow capacity? I've been mulling a design like the new Eshopps RS-200 4th Gen - socks, something like a Tunze 9410 DC DOC Skimmer and Ecotech Vectra S2 return pump.

higher water volume just provides more forgiveness when it comes to water quality so not necessarily "more" important than skimmer or flow capacity, which are both controllable with pumps whereas sump water volume is not as easily adjustable unless the sump comes with adjustable baffle. I would agree with @joseserrano re Trigger systems

I agree. My thought is that 100 gallons is a decent volume of water for stability in and of itself-- so more sump volume is always better, of course, but it's not like you have just a 30 gallon tank, or even a 50. Best wishes!
