Currently I have 100gal FOWLR with 6 fish. Current sump is too small. I’m looking to upgrade my old sump with the below design. Looking for input from more experienced hobbyists.

I have a 120g FOWLR with an Eshopps 28g sump, I believe it is an A200 model. Works just fine.

I assume the coarse/medium/fine is foam material. I would not suggest this unless you are prepared to engage in daily maintenance. (Rinse, etc.)
I would suggest making the second chamber upstream of the skimmer a refugium. Fug’s are invaluable.

What software did you use to design your sump?
